My son is now the ripe old age of 2, which means it’s time for my initiation into the world of Being a Soccer Mom. I want to do something special with Colton during the last few months before Baby arrives, so we signed him up for a parent/child soccer “clinic.” It’s basically a group of preschoolers getting together every weekend to kick a ball back and forth to their parents between tantrums. And continuously asking if it’s snack time yet.

This sausage, egg, and hashbrown breakfast casserole recipe is the perfect make-ahead breakfast! Recently, it was my turn to help provide breakfast for my MOPs group. I’m not a morning person (at all!), so it’s hard enough for me to get out of the house in time for our meetings without having to add cooking to my hectic morning. I knew I needed to bring something that I could make the night before, and this breakfast casserole was just the ticket. In the morning, all I had to do was bake and go. Plus, this breakfast casserole tastes really, really good. Which is a real bonus when it comes to recipes, especially ones that you’re sharing with a large group of people.

My son is always hungry. He loves to snack throughout the day. Who doesn’t? We are out and about most days, so I’m always on the lookout for portable, toddler-friendly snacks. I first discovered toddler snack mix at one of Colton’s friend’s birthday parties. He (and all the other kids!) gobbled it up. I’ve been making it regularly ever since. This is Colton and I’s favorite “recipe” for toddler snack mix.

Happy Valentine’s Day!

To celebrate, Colton and I baked (and ate!) some fun heart-shaped Valentine’s cookies. He enjoyed the baking process, but definitely enjoyed the eating part more! He’s at an age now where he really likes helping in the kitchen. His favorite kitchen tasks are cracking eggs and stirring (which he calls “stir stir stir!”). That’s probably why his favorite breakfast is scrambled eggs. Luckily for him, there was lots of stirring involved in the cookie making process.
